Every once and a while, I skip doing my regular This Week Currently post because I just don't have the content to fill in the all spaces. This would be one of those weeks. One of those weeks when I fell asleep before 8 p.m. on more nights than I should admit to. So instead of watching, listening, reading or doing anything, I was pretty much sleeping and working.
And thinking about chocolate chip cookies.
It was only within the past year that I started to like chocolate chip cookies. Weird. I know. Most beloved cookie ever and I never liked it. But in this ongoing taste bud renaissance I have been having I have been re-trying foods I always swore I did not like and finding out that I actually like them, I have discovered that I really do enjoy chocolate chip cookies. A lot.
And anyone who has a chocolate chip cookie recipe likes to claim it is the best ever. Seriously, Google "best ever chocolate chip cookies." We all think very highly of our own recipes. But I guess that makes sense. Every one likes a chocolate chip cookies like it a certain way: crispy, soft, chewy, crispy on the outside but gooey in the middle, with nuts, without nuts, with dark chocolate, with milk chocolate, with semi-sweet chocolate. Really the possibilities are endless.
So over the summer I have baked a few different recipes to determine what my best ever chocolate chip cookie is. I haven't finalized that choice yet--and doubt I ever will. It is sort of a never-ending experiment--but I now know that it should have shaved chocolate in addition to chocolate chips and it needs to have ground oats in it for texture.
And really it is just fun experimenting with everything you can do with a chocolate chip cookie base. I was scrolling through the new posts in my blog reader and spotted a recipe for chocolate chip peanut butter pretzel cookies and thought well, why we don't shove an Oreo in the middle of that and it will be plastered all over my Pinterest feed in about 2.7 seconds. I feel like recipes lately have become all about how many different things can we cram into one treat to make it a Pinterest hit. I am super jaded when it comes to these things.
While I scoffed at that recipe, I was thoroughly intrigued by the combination of chocolate chips and pretzels in a cookie. Sweet and salty is just a great combination for my taste buds. So I Googled away and came up with this recipe. And while I was mixing it up, I threw in a half cup of peanut butter in it on whim. (And took back all prior judgement of the other recipe.) (Sorry other recipe.) (But I did not shove in an Oreo in the middle of it.)
Why did I add the peanut butter? Because I realized the result was the cookie equivalent of my favorite candy bar, the Take Five bar! So delicious!
A note about this recipe: I used my standard two tablespoon cookie scoop to make these and ended up with 90! Cookies! The yield on the recipe says 24 cookies. I am very forgiving on recipe yields because they are just estimates but holy cow, I would have halved the recipe had I known. Instead, I was pawning cookies off on everyone I came in contact with over the weekend.
