Savory Sunday: I will take my chicken pot pie to go, please!

I have this theory about refrigerated tubes of biscuits and crescent rolls. I have this theory that they can sense fear. Whenever I peel back the paper label on the tube, I live in fear of the tube popping open and sending doughy masses all of the kitchen. The tube must sense this fear because they never pop open for me!

Naturally, this week's Savory Sunday features a recipe that called for a tube of crescent roll. Naturally, I was afraid. Naturally, the tube would not pop open. In the end, I had to bang it against the countertop. Take that tube of dough!

Creamy Chicken Pockets

I like to call these Chicken Pot Pie To Go! They are so incredibly delicious. A chicken filling wrapped inside a crescent roll, it would be easy to incorporate other ingredients into the filling. A vegetable filling would probably be amazing. I found that as written, the recipe makes more filling than can fit into the crescent rolls. Also, crescent rolls are a pain to fold up. But in the end, the result was the highlight of my week.

Deliciousness rating (scale of 1 to 5 saucepan): 5!!!!

Tex Mex Chicken and Rice Casserole

We will file this one under "what was I thinking?" I generally do not eat rice. In sushi roll? Yes. Half of the tiny clump you get with your main dish at PF Changs? Yes. Any other time that I can think of at this moment? Nope.  So why oh why did I pick a recipe with Rice in the title? I have no idea. Maybe I thought the chicken would dominate. Or the Tex-Mex would dominate. Sadly, neither did. The rice made this casserole so dense; it was like eating a brick.

  2. For what it's worth, I went thru a time when I really didn't like rice. It's still not my favorite thing, but it really helps to use basmati rice rather than plain white rice like Uncle Ben's or something like that.
